Turbot - like halibut but often regarded as the best of the flat fish, great flavour and firm white flesh

Brill - remains an underated fish with a sweeter taste and complements white wine

Dover Sole - king of the soles, crisp light flesh with a sweet taste

Magrim - also known as whiff, enjoyed in Spain similar to lemon sole

Pollock - good tasting fish, popular in France, closely related to Coley

Catfish - found in the North Atlantic, flesh is firm, taste is underated

Red Mullet - big flavour, fantastic colour, complements any form of preparation

Langoustines - also known as Dublin Bay prawns but closer related to lobster, sweet taste,with a prawn like texture

Squid - firm texture, strong flavour, fantastic when battered
